🍲 Mixed Vegetable Sambar – A Variety of Flavors and Nutrition!

Ingredients:
- Moong dal (yellow lentils) – 1/4 cup
- Toor dal (pigeon peas) – 1/4 cup
- Small onions – 15
- Tomato – 1 large
- Vegetables – as per your choice (brinjal, drumstick, ash gourd, okra, etc.)
- Salt – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Asafoetida – 1/4 tsp
- Sambar powder – 2 tbsp
- Jaggery – a small piece
- Coriander leaves – a handful, chopped
- For tempering:
- Oil – 2 tbsp
- Mustard seeds – 1/2 tsp
- Curry leaves – a handful
- Dried red chilli – 1
Required Cooking Equipments:
- Pressure cooker – to cook the dal
- Large pan or pot – to cook the vegetables and make the sambar
- Small frying pan – for tempering
- Ladle – to mix and serve
Cooking Instruction :
- Cooking the Dal:
- Wash the moong dal and toor dal thoroughly. Add 1 cup of water, a pinch of turmeric powder, and pressure cook for 3 whistles until soft and mushy. Set aside.
- Prepping the Vegetables:
- Wash and chop your preferred vegetables (like brinjal, drumstick, pumpkin, etc.).

- Cooking the Vegetables:
- In a large pan, add the onions, tomatoes, and chopped vegetables. Pour enough water to cover the vegetables. Add salt, turmeric powder, and asafoetida. Cook until the vegetables are soft.
- Combining with Dal and Spices:
- Add the cooked dal to the vegetable mixture and mix well.
- Add the sambar powder and adjust the water to get the desired consistency.
- Let the sambar boil for 5–10 minutes to allow the flavors to combine.
- Add the piece of jaggery – this will enhance the taste without making it sweet.
- Tempering:
- In a small pan, heat oil. Add mustard seeds. Once they splutter, add dried red chilli and curry leaves.
- Pour this tempering into the boiling sambar.
- Finishing Touch:
- Add chopped coriander leaves and turn off the heat.
- Delicious, fragrant vegetable sambar is ready!
Serving Method:
- Serve this sambar hot with plain rice, idiyappam, idli, dosa, or even upma.Add a spoon of ghee on top for an enhanced taste.
