Ingredients:
- For the Dosa Batter
- Raw rice – 1 cup
- Urad dal – ¼ cup
- Fenugreek seeds – ½ tsp
- Salt – ½ tsp
- Water – 1 cup
- Soak the ingredients for 8 hours, grind to a smooth batter, and ferment.
- For Mysore Chutney (Spicy Chutney Spread)
- Dried red chilies – 4
- Garlic – 5 cloves
- Tamarind – small gooseberry-sized
- Curry leaves – 1 sprig
- Coriander seeds – 1 tsp
- Cumin seeds – ½ tsp
- Salt – ½ tsp
- Oil – 2 tsp
- For Potato Masala (Filling)
- Potatoes – 3 (boiled and mashed)
- Onion – 2 (chopped)
- Ginger garlic paste – 1 tsp
- Asafoetida – a pinch
- Turmeric powder – ¼ tsp
- Curry leaves – a few
- Oil – 2 tsp
- Mustard seeds, urad dal – ½ tsp (for tempering)
- Coriander leaves – to garnish
Required Cooking Equipments:
- Dosa tawa
- Batter vessel
- Small frying pan (for chutney & masala)
- Spatula
- Mixer grinder
- Serving plate
Cooking Instruction :
- To Make Dosa Batter
- Soak rice, urad dal, and fenugreek seeds for 4–5 hours. Grind to a smooth batter, allow it to ferment overnight. Add salt and mix well before use.
- To Make Potato Masala
- Heat oil in a pan, temper with mustard seeds and urad dal.
- Add chopped onion, ginger garlic paste, turmeric, and sauté well.
- Add mashed potatoes and salt, mix thoroughly.
- Garnish with coriander leaves and set aside.
- To Make Mysore Chutney
- In a pan, heat oil and sauté coriander seeds, cumin seeds, red chilies, garlic, and curry leaves.
- Once aromatic, add tamarind and cook slightly.
- Let cool.
- Grind to a thick paste with little or no water – the color should be a rich red.
- This chutney is used as a spread on the dosa.
- How to Cook the Dosa
- Heat the dosa tawa and pour a ladle of batter in the center, spreading it in circles.
- Spread 1 tsp of Mysore chutney over the dosa.
- Place some potato masala in the center and fold the dosa over.
- Serve hot!
Serving Method:
- Mysore Masala Dosa pairs well with tomato chutney, coconut chutney, or sambar.
- For a true hotel-style experience, serve with a dollop of butter on top!
