Egg Biryani
When we talk about biryani, it instantly makes everyone’s mouth water. Not just for weekends, nowadays biryani has earned a special place even for regular lunch meals. Although chicken and mutton biryani are the most popular varieties, egg biryani always has its own special group of fans. Even those who don’t usually like eggs find it hard to resist when eggs are cooked in biryani!
This egg biryani is very easy to prepare at home with simple ingredients available in your kitchen. It requires less time but is packed with mild spice and delicious aroma. The blend of ginger-garlic, mint, and coriander leaves adds a wonderful flavor that appeals to everyone from kids to adults.
So today, we are going to see a simple egg biryani recipe made with everyday home ingredients — no fancy stuff needed!

Ingredients:
- Eggs – 4
- Basmati rice – 1 cup
- Onions – 2 (sliced)
- Tomatoes – 2 (chopped)
- Ginger-garlic paste – 1.5 tsp
- Yogurt – 2 tbsp
- Coriander powder – 1 tsp
- Chili powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Salt – as needed
- Oil – 3 tbsp
- Ghee – 1 tbsp
- Masala (Coriander + Mint leaves):
- Mint leaves – 1 handful
- Coriander leaves – 1 handful
- Whole Spices (optional):
- Bay leaf – 1
- Cloves – 2
- Cardamom – 2
- Cinnamon stick – small piece
- Black pepper – 1/2 tsp
Cooking Instruction :
- Wash and soak the basmati rice for 20 minutes, then drain.
- Boil the eggs with salt and turmeric powder. Peel and keep aside.
- Heat oil and ghee in a large pan. Add whole spices and sauté till fragrant.
- Add sliced onions and fry until golden brown. Then add ginger-garlic paste and tomatoes.
- Mix in the powdered spices (turmeric, chili, coriander), salt, and yogurt. Add chopped coriander and mint leaves.
- Add the boiled eggs and lightly sauté in the masala mixture.
- Add the drained rice and gently mix everything together. Pour 2 cups of water and cook until done.
- Cover with a lid and cook on low heat (dum) for 15 minutes.
Serving Method:
- Serve egg biryani with plain yogurt, onion raita, or potato gravy. It’s a perfect dish for a simple lunch or dinner!
Cooking Tips :
- Lightly sautéing eggs with the onion masala doubles the flavor!
- Stir once during cooking to check if the rice is done properly.
- Adding fried onions with ghee on top enhances the aroma and taste.
