Ingredients:
- Paneer – 50 kg
- Big onions – 2
- Garlic cloves – 10
- Green chillies – 3
- Dry red chillies – 3
- Curd (yogurt) – ¼ cup
- Curry leaves – 1 handful
- Red chilli powder – 2 teaspoons
- Garam masala – 1 teaspoon
- Cumin powder – 1 teaspoon
- Maida (all-purpose flour) – 2 tablespoons
- Cornflour – 2 tablespoons
- Coriander leaves – a little
- Salt – ¼ teaspoon (adjust as needed)
- Oil – ¼ litre (for frying and sautéing)
Required Cooking Equipments:
- Kitchen knife – for chopping paneer and onions
- Mixing bowl – to marinate the paneer
- Large tawa or kadai – to fry and sauté
- Slotted spoon – to remove fried items
- Stove
Cooking Instruction :
- Cut the paneer into square pieces and add them to a large bowl.
- Add the following ingredients to it and mix well:
- Cumin powder – ½ teaspoon, Garam masala – 1 teaspoon, Red chilli powder – 1 teaspoon, Salt – as needed,Cornflour – 2 tablespoons, Maida – 1 tablespoon
- Mix thoroughly and let it marinate for 30 minutes.
- Heat oil and deep fry the paneer cubes until golden and crispy. Set aside.
- In a kadai, add 2 tablespoons of oil and sauté:
- Finely chopped garlic, Dry red chillies, Slit green chillies, A handful of curry leaves, 1 large onion, sliced,
- Once the onions are nicely sautéed, add well-beaten curd to the mixture.
- Add: Garam masala – ½ teaspoon, Red chilli powder – 1 teaspoon, Salt – as needed,Stir well.
- Add the fried paneer into this masala mixture and mix until coated well.
- Finally, sprinkle some chopped coriander leaves and serve hot.
Serving Method:
- Serve Hyderabadi Paneer 65 as a standalone snack with chutney or sauce.
- Perfect as a side dish for biryani, fried rice, naan, or even stuffed in mini paratha rolls.
- For extra zing, squeeze a little lemon juice before serving.
Cooking Tips :
- Make sure the curd is well-beaten before adding to prevent curdling.
- Use soft paneer for best results; if it’s too firm, soak it in warm water for 5 minutes.
- For more flavor, you can add a bit of tomato sauce or chili sauce to the curd masala mix.
