- For the coconut paste:

- Green chilies – 4
- Shallots – 6
- Roasted Bengal gram (pottukadalai) – 2 tbsp
- Cumin seeds – 1 tsp
- Fennel seeds – 1 tsp
- Cloves – 3
- Cardamom – 2
- Cinnamon stick – 1-inch piece
- Cashew nuts – 6
- Poppy seeds – 2 tsp
- Curd – 2 tbsp
- 👉 Blend all of the above with a little water into a smooth paste.
- For tempering and making the kurma:
- Oil – 3 tbsp
- Bay leaf – 1
- Fennel seeds – 1 tsp
- Onion – 1 (finely chopped)
- Ginger-garlic paste – 1.5 tbsp
- Curry leaves – a small handful
- Main vegetables & extra ingredients:
- Carrot – 1 (chopped)
- Potato – 1 (chopped)
- Salt – as needed
- Water – 1.5 cups (or as needed)
- Tofu – 1 cup (cubed)
- Coriander leaves – few (chopped)
Cooking Instruction :
- 1. Prepare the Coconut Paste
- In a blender, add all the ingredients listed under “For the coconut paste.” Add a little water and grind it into a fine, smooth paste. This will give the kurma its signature texture and flavor.
- Start Tempering
- Heat 3 tablespoons of oil in a pressure cooker.
- Add bay leaf and fennel seeds. Let it sizzle until fragrant.
- Next, add chopped onion, ginger-garlic paste, and curry leaves.
- Sauté this mixture on medium heat for about 5 minutes or until the raw smell fades and the onion turns translucent.
- Add the Vegetables
- Add the chopped carrots and potatoes.
- Sprinkle the needed salt and sauté for 2 minutes.
- This quick sautéing helps the veggies absorb flavor.
- Add the Coconut Paste
- Now add the prepared coconut paste to the cooker.
- Pour in 1.5 cups of water and mix well.
