Ingredients:
- Goat Brain – 2 (cleaned thoroughly)
- Oil – 2 tablespoons
- Onion – 150 grams (about 2 medium onions, chopped)
- Tomato – 1 (chopped)
- Salt – 1 to 1½ teaspoons (as needed)
- Turmeric powder – ½ tablespoon
- Red chili powder – 2 tablespoons (adjust to taste)
- Garlic (crushed) – 1 tablespoon
- Ginger (crushed) – 1 tablespoon
- Garam masala – 1 tablespoon
- Pepper powder – 3 tablespoons (or to taste)
- Curry leaves – 1 sprig
- Water – ¼ cup
Required Cooking Equipments:
- 1 heavy-bottomed pan with lid
- 1 spatula
- 1 bowl (for cleaning brain)
- Knife and cutting board
Cooking Instruction :
- How to Clean the Brain
- Wash the brain thoroughly in cold water and gently remove the outer membrane. Optionally, you can boil it in hot water for 1–2 minutes to make it easier to clean.
- Preparing the Masala
- Heat oil in a pan. Add onions and sauté until golden.
- Add tomatoes and salt. Sauté until soft.
- Add crushed garlic and ginger. Cook until the raw smell disappears.
- Add turmeric and chili powder. Sauté for 2 minutes.
- Adding Spices
- Now add garam masala and pepper powder. Mix well.
- Add curry leaves and ¼ cup water. Let it boil for 2 minutes.
- Cooking the Brain
- Gently place the cleaned brain into the masala (do not stir too much as it is delicate).
- Cover and cook on low flame for 5 minutes.
- Flip the brain carefully and cover again. Cook for another 5–7 minutes.
- Final Step
- Uncover and sauté for 2–3 minutes if needed to evaporate excess moisture.
- Check for salt and spice levels, adjust if needed.
- The Brain Pepper Roast is ready. Serve hot!
Serving Method:
- Goes well with rice, chapati, parotta, or naan.
- You can garnish with coriander leaves or a few drops of lemon juice for added flavor.
Cooking Tips :
- To clean the brain easily, soak in hot water for 1–2 minutes and gently peel off the membrane.
- If you prefer less heat, reduce chili and pepper powder.
- Adding a bit of ghee at the end enhances the taste.
